Waterkloof's aim is to produce “honest” wines that truly express the unique site on the Schapenberg. At Waterkloof they are fortunate enough to be looking after a vineyard, capable of producing naturally balanced grapes, imbued with their own character and sense of place. To respectfully transmit this character and balance into the bottle, they believe it makes sense to turn those grapes into wine with minimal intervention and maximum care.
Cabernet Sauvignon has always been the king of the reds. The grapes for the Peacock Wild Ferment Cabernet Sauvignon are sourced from the cooler slopes of the Helderberg ward on the coastal outreaches of Stellenbosch. On the nose you can enjoy subtle red berries, a hint of chocolate and green spices. The palate has a lifted freshness and soft tannins which are well integrated - the fruit also carries through well to the aftertaste.
This set is completed with the delicious Wild Ferment Chenin Blanc with a beautiful straw yellow color. On the nose you can enjoy aromas of peach, lime and green apple. These elegant flavours carry through onto the palate with a lovely freshness and a long, elegant finish. It's always wine o'clock!
