This wine is born from the ancient, over 40-year-old Salomón vineyard in Fuentecén, a unique plot at over 820 meters altitude with calcareous and stony soils, benefiting from a unique microclimate. It boasts a beautiful, clear cherry-red color. The nose is exceptionally intense with aromas of very ripe black fruit (blackberries, plums, redcurrants), black olives, subtle, well-integrated oak, tobacco leaf, forest berries, and a very subtle spicy edge (including hints of incense, clove, and mint chocolate). The palate is complex with abundant fruit expression, a high acidity, and a very long, friendly finish supported by ripe, polished tannins. After manual harvesting and meticulous selection, the wine undergoes a 5-day cold maceration and then 19 days of fermentation. It is matured for 11 months in new Iberian oak barrels, where the tannins gain length and depth.

This wine is an excellent match for red meat and hearty wild game dishes.
