This certified-organic Verdejo is sourced from the producer's own vineyards in various zones of the D.O. Rueda appellation, characterized by poor, gravelly soils and limestone outcrops at medium and high altitudes. It also includes grapes from low-yielding old vines over sixty years old. The wine is intensely aromatic, featuring notes of tropical fruit and mineral touches. The palate is wonderfully fresh and fruity, with a delicate hint of fresh herbs and anise. It offers fragrant notes of fennel and mountain herbs and underlying mineral and balsamic aromas. The finish is beautifully fresh with fine, lingering acidity. Grapes are harvested during the night to preserve aromas and gently pressed with skins at cool temperatures. Natural clarification is followed by spontaneous fermentation. A portion of the fermentation takes place in barrels before the final blending, which helps to refine and polish its tannins.

This wine is an ideal companion for salads, vegetable dishes, and seafood.
