For this Acta Non Verba Shiraz rosé wine, grapes were selected from the Anvers Razorback vineyard in the Southern Adelaide Hills. The grapes were hand-picked early in the morning. They were then gently pressed whole in an air bag press to minimise absorption of colour and tannins. After gentle pressing, only the juice from the first pressing was cooled and settled in stainless steel tanks for 48 hours to settle the grape residue. The clear juice is then carefully siphoned and inoculated with a specially selected yeast to enhance the wine's aromas. The wine is fermented under temperature control to have a long, slow fermentation to preserve the fresh aromas and fruity flavours of the Shiraz. After fermentation, the wine is aged on light yeast residue for about 2 months before bottling to retain maximum freshness.
