An exceptional white wine aged at the bottom of the sea!
This unique wine is made from half Verdejo and Sauvignon Blanc planted in bushvine to protect them from the vagaries of nature. The juice undergoes 3 months of aging sur lie on new, French oak. Unlike most other white wines, malolactic fermentation follows to soften the acids (on the same oak barrels). The bottles then go off the coast of Valancia 40 metres deep on the seabed to continue maturing for 6 months. In the absence of light, at a stable temperature of 14 degrees and constantly rocked to sleep by the swell of the water, this becomes a full-bodied, rich, creamy wine with nice supporting acids and a solid potential to age.
Ageing: 3 months on lees, 6 months in the bottle in the Mediterranean seabed at a depth close to 40 meters
Tasting Note:
Appearance: Lemon yellow, clean and bright, with some green hues.
Nose: Intense aromas of fresh citrus, lime zest, herbal notes and hints of fennel and white almonds.
Palate: Medium body, medium to high crisp acidity, smooth on the palate with elderflower, citrus, hay, pear and hints of fresh melon. The six-month submerged aging has polished the aromas of the lees, making the wine more vertical and delicate, while enhancing its mineral and refreshing notes, giving it more balance, increasing the sensation of silkiness and prolonging its finish.Perfect with grilled or steamed seafood such as prawns, crabs, mussels or clams. Also excellent with salads, rice and risottos, white meats, soft cheeses and marinated dishes.
