This set contains the Electric Knife Sharpener and the Polishing Unit, combining two working steps into one for maximum efficiency. The main unit uses two pairs of ceramic whetstones: the first pair restores the dull edge, and the second pair refines the cutting edge for a clean finish. The separate polishing unit is used for the finest edge refinement. The compact, lightweight sharpener operates at 220-240V and 60W. Sharpening Routine: Hold the knife by the handle and apply light pressure with the forefinger as the blade is pulled through the sharpener. Run the blade straight, slowly, and evenly within the Guide Channel and back. Do not interrupt the sharpening process; a full pass is required for a keen edge. Raise the handle to follow the edge contour of the curved portion of the blade. Ensure the blade does not cant or tip during the process. Note: This sharpener is designed exclusively for symmetrically ground steel blades; not for serrated knives, pocket knives, or technical cutters.
